It also contains lard (pork fat) and other processed ingredients. Let's break down exactly what's in that blue box and why it can cause weight gain.

Problem #1: Jiffy Uses "Degerminated" Corn and Enriched Wheat Flour

Flip over that Jiffy box and look at the first two ingredients. You'll see wheat flour (enriched, of course) and degerminated yellow cornmeal.

Here's what that means:

Enriched wheat flour: The wheat has been stripped of its natural nutrients, then sprayed with synthetic thiamine, niacin, reduced iron, and folic acid. We've talked about this in other posts, but it's the same story every time. Your body doesn't recognize these fake nutrients the way it does real food.

Degerminated cornmeal: This means the germ (the living, nutrient-rich heart of the corn kernel) has been removed. That germ contains healthy fats, fiber, vitamins, and minerals. Without it, you're left with basically corn-flavored starch that spikes your blood sugar fast. Not to mention, they have to add synthetic “nutrients” back in that you’ll see at the end of the list, like niacin, reduced iron, thiamine mononitrate, etc. 

When your body sees "nutritionally empty food" like this, it goes into survival mode. Instead of burning those calories for energy, it stores them as fat because it thinks you're not getting real nutrition.

Problem #2: Jiffy Cornbread Contains Hidden Animal Fat

Here's something most people don't realize: Jiffy cornbread mix contains lard, which is rendered pork fat.

If you're avoiding pork for religious, ethical, or health reasons, you probably had no idea it was hiding in your cornbread. But even if pork isn't an issue for you, industrially produced lard is highly processed and inflammatory. It's not the same as the traditional lard your great-grandmother might have used. Here is our family recipe for homemade cornbread, straight from The Naturalite Family Cookbook!

Ingredients:

  • 1 cup non-enriched, unbleached all-purpose flour
  • 1 cup yellow cornmeal (pure corn, check to make sure corn is the only ingredient)
  • ⅔ cup raw cane sugar
  • 1 tsp all-natural cracked sea salt
  • 3 ½ tsp baking powder
  • ⅓ cup grapeseed oil
  • 1 cup non-flavored, all-natural almond milk or oat milk
  • 1 large brown egg

Directions:

1. Preheat oven to 400 degrees Fahrenheit. Grease your muffin pan or 9-inch round cake pan and set aside.

2. In a medium bowl, add the flour, cornmeal, sugar, salt and baking powder. Whisk to combine well.

3. Make a hole in the center of the dry ingredients and add grapeseed oil, milk and egg. Stir until combined. Do not overmix!

4. Pour the batter into the greased pan and bake for about 20-25 minutes or until the top of the cornbread is golden brown. Poke a toothpick through the center of the cornbread to make sure that the inside is thoroughly cooked. If toothpick comes out clean, the cornbread is done cooking. If the toothpick comes out wet, cook for a few minutes more.

5. Serve and savor!

The result? Moist, slightly sweet cornbread that actually supports your weight loss goals instead of working against them.
