2. Corn syrup solids: This is a cheap filler that spikes your blood sugar fast and crashes it hard an hour later.

3. Preservatives: Ingredients like sodium aluminum phosphate and monocalcium phosphate extend shelf life but, again, aren’t natural ingredients your body knows how to break down.

4. Artificial colors and flavors: These make the pancakes look and taste good, but they offer zero nutritional value.

Pancake Swap Option 2: Make It From Scratch!

  • 1 ¾ c non-bleached, unenriched all-purpose flour
  • 1 tbsp baking powder
  • 3 tbsp raw cane sugar
  • ¼ tsp all-natural coarse salt
  • 1 ½ c all-natural non-dairy milk (preferably with vanilla flavor) (Ex: almond milk or coconut milk)
  • 2 large brown eggs
  • 6 tbsp extra virgin olive oil
  • 1 tsp pure vanilla extract (if didn’t use vanilla flavored milk)
  • ½ c blueberries, cut in half

Directions: 

  1. Preheat waffle maker or griddle. Lightly grease with a little olive oil or coconut oil.
  2. In a medium bowl, whisk together flour, baking powder, sugar and salt.
  3. Add milk, eggs, olive oil and vanilla extract. Whisk until the batter is smooth. Stir in
    blueberries.
  4. Add batter to the waffle maker or griddle. Usually about ¾ cup per waffle or pancake.
  5. Cook per instructions for your waffle maker or until pancakes are golden on the griddle.
  6. Immediately serve and savor!

The Syrup Swap:

And to top your pancakes or waffles, the syrup rule is simple. Your syrup ingredient list should say one thing: "100% pure maple syrup." Nothing else. Grade A Amber or Dark has the richest flavor, and store brands are totally fine as long as the label is clean.
